This is our family's favourite breakfast treat! We even eat it as dessert sometimes.
3 cups quick oats
1 cup brown sugar
1/2 cup melted butter/margarine
2 tsp baking soda
2 tsp cinnamon or more depending on how much you love it (I love the smell of cinnamon I use 2 heavy shakes)
2 eggs
1 cup milk
1 capful of vanilla
Preheat oven to 350F. Spray cookie sheet with cooking spray. Mix oats & brown sugar with melted margarine until coated. Add baking soda and cinnamon. Mix in eggs, milk and vanilla. Pour mixture on cookie sheet. Bake for 30 minutes. Break up into small pieces as soon as it comes out of the oven, should be somewhat dry. Divide into bowls, addd milk. We heat it up in the microwave with the milk and add berries. Will keep in fridge, if it doesn't get eaten in one morning.
Additions: I have added bran flakes and flax to the mixture before.
